Chewy is the Best…
I don’t remember where I got this recipe. I remember being on a quest many, many years ago to find a really good Oatmeal Cookie recipe.
Everyone should have a solid Oatmeal Cookie Recipe in their bag of tricks.
It’s standard. All American.
It may have been the back of a raisin box? Maybe an oat container?
But look no further. This is the one you need if you’re all about CHEWY Oatmeal Cookies.

Set your oven to 375.
First you will need to put 1 cup of raisins in a container and cover them with water to soak while you are working on the recipe.
In a large bowl, add 1 cup softened butter or shortening, 1 cup sugar, and 1 cup brown sugar.
Now add 2 eggs and beat well.
Add 2 cups flour, 1 teaspoon baking soda, 1 teaspoon salt, 1/2 teaspoon cinnamon, and 1/4 teaspoon nutmeg.
Nutmeg is key. You won’t find that in many Oatmeal Cookie recipes, but I find that pairing cinnamon and nutmeg together is a very natural spice combination.
You will combine that well.
Now add 2 cups uncooked oats, 1 cup chopped pecans, and the raisins you’ve been soaking. Drain them before adding them.
This will be a thick batter, so you’ll have to stir by hand or get your hands in there to combine it all.
Shape the dough into golf-sized balls, flatten slightly, and place on a slightly greased baking sheet.
Bake at 375 for 9-12 minutes until golden brown.
The key to chewy cookies is not to over bake.
You want the cookies to barely be golden as the cookies will still continue to “bake” while they are out of the oven and cooling down.
If the baked cookies aren’t flat enough like an oatmeal cookie should be when they come out of the oven, don’t be afraid to use your spatula to flatten slightly while still warm.
Remove from pan to cool.
Cool entirely before storing them in an air-tight container.
To me, the cookies are best the first couple of days.
You could even slightly reheat a cookie in the microwave before eating it. The warmth will get the moist chewiness working again…
